Have you all tried to decorate a cake? I know I have. I used to love baking cakes and decorating them but I always seemed to mess up the icing. I never really knew any of the secrets the pros use for decorating their cakes.

Now….. I will never be as good as they are but here are a few tips that helped me along to better icing. Whether, you are frosting your wedding cake, wedding cupcakes or wedding cookies, these tips may be helpful to you as well.

1. If your icing is too thick to spread, use a bit of corn syrup to thin it out and make it easier to spread on the cake

2. Bake your cakes the day before icing them - I don’t know about you but I always had icing that “ran”
* this is because even though the cake feels cool to the touch, it actually takes a long time to cool inside so basically the icing and filling melts

3. Never touch the cake with your spatula - always have enough icing or filling to spread without touching the cake top - this will prevent crumbs from getting into your lovely designs

4. Another idea to keep your cake neat and tidy looking is to “dam up” the filling
* does your filling fall out of the cake
* again, if you let the cakes cool long enough, it will stop the filling from thinning out
* plus you can add a small “fence” of icing around the outside of the cake to keep the filling in between the layers
* let the icing dry before adding the filling
